R&D Research Pastry Chef and Product Developer Job Details

We are looking for a passionate and creative R&D Research Pastry Chef who embraces the art of baking with a scientific approach and works alongside Operations, Sales, Marketing, QA and other support teams to develop new and innovative products and optimize existing ones.

This role will be reporting directly to the R&D Director, and be responsible for testing, trialing, implementing recipes, getting hands on in our cake, bakery and pastry research, development and scale-up to mass production.

Work closely with cross-functional teams for managing the product lifecycle including conceptualization, design, trials, creation and evaluation of new concepts, recipes, and products for targeted markets or customers and final product specifications.

R&D Research Pastry Chef and Product Developer Job Responsibilities

  • Formulate new bakery, cake and pastry products from concept approval, formula and product development, plant trial runs to launch and post-launch
  • Engage in recipe and process optimization continuously improving product quality, shelf-life, as well as cost effectiveness and production efficiency
  • Collaborate with cross-functional teams including Operations, QA, Marketing, Sales and Supply Chain
  • Prepare samples and prototypes for customer and sensory evaluation
  • Develop initial product specifications, standard operating procedures, and product formulations
  • Ensure regulatory compliance and product requirements during product design including ingredient and allergen listing, nutrition and claim information, cost and supplier information utilizing software (ERP system, Genesis)
  • Utilize ingredient and process knowledge, experimental design and data interpretation tools to make technically sound recommendations
  • Collaborate and provide technical guidance cross-functionally with internal and external stakeholders
  • Maintain detailed and accurate documentation of all work performed and generate summaries and reports
  • Participate in product sensory using internal and external panels
  • Keep current on product and consumer trends, apply this knowledge in the development and planning process.
  • Other related duties as assigned or required

R&D Research Pastry Chef and Product Developer Skills

  • Food science degree or a related science discipline or culinary research diploma / baking / pastry program
  • Experienced pastry chef with a great sense of taste and love for baking
  • 3-5 years’ proven experience in baking and product development, preferably within manufacturing industries
  • Advanced baking skills and understanding of baking techniques
  • Passion for baking (professionally)
  • Strong knowledge of ingredient functionality, product and sensory evaluation, nutrition, food manufacturing processes, food microbiology, quality assurance and market research principles
  • Solid technical understanding of related manufacturing equipment
  • Proven ability to be proactive, self-starter and capable of adapting to rapidly changing priorities
  • Effective communication skills, both written and verbal in English (Chinese is an asset)
  • Detail oriented with strong organizational and project management skills
  • Strong analytical, research and problem-solving skills
  • Adept in MS Office, ERP system and nutrition software (Genesis or related software)
  • Knowledge of retail, consumer packaged goods and / or franchising is an asset
  • Ability to work in a food allergen environment (wheat, dairy, egg, milk, soy, etc.)
  • Willingness to travel as required
